It’s that time again (yes, it’s already the third Wednesday of October!!!) for Crockpots and Cassaroles! If you’re new, this is a link up with my friend Jessica at Gingham and Lattes! I honestly have loved sharing recipes with you guys, it’s been a lot of fun and definitely out of the ordinary for me. Have a recipe you want to share? The Ingredients:
1 filet of halibut
Half a loaf of bread
Whole Milk
5 eggs
Butter
Shredded Cheese
Garlic Powder
Onion Salt
Salt
Pepper
Thyme
The Recipe:
Preheat oven to 350 degrees
Halve loaf of bread and slice, butter one side of each slice then cut into cubes
Skin fish (if using fish) and cut fish or meat into small cubes. Season cubes with desired seasonings (I used garlic powder and onion salt for the halibut)
In a separate bowl, whisk together eggs and milk and season with salt and pepper to taste
In a greased baking dish, layer bread, cheese, halibut and egg mixture. Top with cheese
Bake at 350 degrees for 25-30 minutes or until egg mixture is set and fluffy
The Rest:
This is one of those recipes that is so easy and effortless that it should be a staple in everyone’s recipe box. This 5 egg and halibut casserole is also super easy to take and make your own. This recipe was first shared with me by my mother-in-law and I couldn’t get over how deliciously cheesy it was. I mean, this recipe has two of my favorite things: bread and cheese. I love picking up a loaf of bread from the grocery store bakery for this recipe. It just adds so much to this simple recipe. In Alaska, it’s pretty much commonplace to have fresh-caught fish in your freezer. When we moved here, my in-laws loaded us up with all the goods. So that’s why I threw halibut into this casserole but you could easily substitute the halibut for your favorite fish or breakfast meat (ham would also work great!) and even peppers for a vegetable version. The other thing I love about this recipe is that most of the ingredients are stuff we typically keep on hand. If I didn’t splurge on the good bread, I could have made this entire recipe without going to the grocery store! This is a great option for those days when you don’t have a lot of time but also need to clean out the fridge and pantry. Keep this quick and simple recipe on your “oh crap” list because it’s seriously so simple to throw together for breakfast, dinner, or brunch.
