My Favorite Fall Recipes
Made in Mom Jeans Sweet Potato, Black Bean, + Turkey Chili
This turkey chili recipe became a favorite of mine and Jasper’s during quarantine. With my husband deployed, I found it difficult to make a dinner that was actually healthy and delicious and didn’t take a lot of extra energy or ingredients. Most of the ingredients in my sweet potato, black bean, and turkey chili are either pantry staples or items that you can stock up on in advance and you know will last a good while. I started buying prepackaged and chopped sweet potatoes to make this easy meal even easier. I also love this recipe because it yields quite a bit of leftover which makes lunches easy throughout the rest of the week.
My favorite way to serve this sweet potato, black bean, and turkey chili is with a sprinkle of finely shredded cheese and a dollop of sour cream on top alongside some homemade biscuits (I prefer the Joanna Gaines recipe). This chili is the perfect recipe for those more frigid fall and winter nights.
Made in Mom Jeans Zucchini Bread
My grandmother, Maxine, was an amazing cook. She was one of those cooks who you never really knew what she was going to cook or bake until it was done. Like most Southern grandmas, she was a huge believer in always using what you had on hand which makes recreating her recipes all the more difficult to do. One of my favorite recipes of hers was her famous zucchini bread. My grandmother was known for putting zucchini in everything, so much so that my father even included it in his speech at her funeral.
It's been seven years since she passed away and I still crave her country dinners and southern desserts. In the fall, zucchini bread is one of my favorite treats because it just pairs perfectly with everything from the weather to a steaming hot cup of coffee or tea. If you’re looking to create a signature baking recipe, zucchini bread is a great place to start. With an old church cookbook and some handwritten notes from Maxine, I have started to perfect my own zucchini bread recipe.
One of the reasons I love zucchini bread for fall is because it's got all of your favorite Fall smells and tastes which makes zucchini bread extra cozy and comforting. A little bit of cinnamon and a whole lot of nutmeg if you're my grandmother, a moist, soft center with a crispy exterior. I could go on and on. Zucchini bread is perfect to whip up during the holiday season because it's easy to give as gifts and is a surefire crowd-pleaser as an appetizer, dessert, or snack. My favorite way to eat zucchini bread is warmed up with coffee in the mornings.
Pumpkin Pie Spiced Overnight Chia Pudding
We absolutely love making chia pudding in our house. Not only is it simple and easy to make, it’s super toddler friendly as well! I try to always have three or four mason jars of chia pudding ready to go in the fridge. Chia pudding is perfect for quick grab and go meals or a quick treat when you’re feeling blue. I would have loved to actually include pumpkin puree in this recipe but everywhere I looked in Fairbanks was sold out. So I just settled with pumpkin pie spice and I love the spiced Fall flavor it gives this chia pudding.
